Hello, my name is "Amber"...

....and I'm the still sleep deprived lazy mom that can't get her act together to save her life! Seriously, people...my baby is almost 8 months old & I STILL can't get my act together! I forget things, don't show up to things, lose things, feel scatter-brained & generally confused most days.

The kids get out of school tomorrow & Ive been looking forward to that day because I thought it meant we were finally going to get some time to relax around here. However, it recently came to my attention that relaxing is not what summer is for. Who knew? I guess when you are a "good" mom you have your children's summer days chalk full of day camps, summer school, VBS, baseball, swim lessons, vacations, cooking school, knitting camp, accelerated reading courses, and art appreciation classes. God forbid we let our kids rest!

Don't get me wrong, I love me a good vacation, and swim lessons are a must for my children that sink like a rock the second they hit the water are "challenged" in the aquatics department, but who made up the rule that says summer time needs to be full of all this craziness? Why do I have to be the "lazy" mom just because I need a break? I seriously doubt I'll fall prey to the guilt-inducing "kiddie enrichment" schemes & sign my kids up for a bunch of crap just so I can be like everyone else, but it sure would be nice if I could find another mom that wanted to be lazy just have fun with me this summer!

Am I wrong? I'm starting to think I need an attitude adjustment or something, because I am WAY outnumbered on this one. E-V-E-R-Y-O-N-E I have talked to has their children's entire summer planned out already.Then... there is me. I'm all "I think we are gonna get a pool pass...and maybe a Sonic pass so we can drink slushies everyday". Maybe the lazy days of summer are as outdated an idea as the 8 track player or the "boom box". When you live in a MP3/i-pod society & you are still carting around your giant portable CD player on your hip...maybe it's time you caught up with the rest of the world. Yeah...that's me....I'm the mom that still uses the "Walkman" & sadly, I think it's time I caught up!

Yeah, yeah....I've ranted and raved about how I hate keeping kids "busy" just for the heck of it, but maybe my kids do need more than a pool pass this summer. I guess I just thought that it was normal to slow down during the summer. Apparently NOT! I've only got 1.5 days to figure this out (dripping sarcasm)! Chances are we will stick to our original plan & I'll just be the lazy mom with severely enrichment-deprived children for one more summer! If you wanna give me a hard time about this you'll most likely find me at the park, the pool, the YMCA, or Sonic. I'll be the one with the 4 sticky children in damp swimsuits that have no idea they are so "deprived".

What's For Dinner, Wednesday!

Here we go....

Chicken Slaw Wraps!

-Olive Oil
-One large onion-diced
-3 crushed garlic cloves
-1 package (12 oz I think) of Broccoli Slaw mix
-2 cups regular Cole slaw mix (or just 2 cups shredded cabbage)
-One pound cooked/shredded chicken breasts. (I cook the chicken in the crock pot all day so that it's extra moist and tender)
-Lemon juice (about 1 Tablespoon...1/2 a lemon).
-Sea salt & Fresh ground pepper
-Tortillas (8 inch)
-Hummus (store bought or homemade)

*Heat Olive Oil over med high heat & add onion and garlic. Cook until onion is transparent & garlic is fragrant. Add Broccoli slaw mix & cook until tender/crisp (about 5-6 minutes). Next, add Cole slaw mix (or just plain old shredded cabbage if you don't want to buy Cole slaw mix) and cook until tender (about 3-4 minutes). Last, add your cooked/shredded chicken and heat through. Mix all ingredients well & remove from heat and squeeze some fresh lemon juice over the top and season with salt and pepper.

Serve on warmed tortillas, with a generous scoop of fresh hummus (you can buy this if you don't feel like making it)!


Hummus:
(if you DO feel like making it!)

-1 can chick peas (save about 1/4 cup of the liquid from the can, and drain the rest)
-2-3 crushed garlic cloves
-3-4 Tablespoons fresh lemon juice
-2.5 Teaspoons Tahini (sesame paste)
-2 Tablespoons Olive Oil
-Sea Salt (start with 1/2 tsp)
-Fresh Ground Black Pepper (to taste)
*You can also add some roasted red peppers if you want to get crazy...but you do not need these!

*Put all ingredients in the blender (or mini food chopper in my case) & blend until smooth.

Memorial Day!

Memorial Day, originally called Decoration Day, is a day set aside for remembrance of those who have died in our nations service. Memorial Day was first proclaimed on 5 May 1868 by General John Logan, in his General order number 11, and was first observed on 30 May 1868; when flowers were placed on the graves of Union and Confederate soldiers. The South, at first, refused to acknowledge, Memorial Day, honoring their dead on separate days until after WWI. It is now observed in almost every state of the union on the last Monday of every May. Since the Civil War more than 1.1 million veterans, both women and men, have lost their lives in service to America. Indeed the Civil War alone accounted for more than 600,00 dead.

On Memorial Day I had the opportunity to witness a memorial in San Francisco, aboard a submarine, the USS Pampanito, a submarine that was used in WWII and Korea. The United States submarine service suffered the highest percentage of casualties than any other of the services that served in WWII. They also sank over 55% of all Japanese shipping sunk in WWII. This was all pointed out to me with pride by several of these veterans.

As our National Anthem was played over the speaker system some of them started to cry as they remembered all of their fallen comrades, the ones that served with them, and the ones that did not. I thought about how many of these veterans brothers had made the ultimate sacrifice so that we may all enjoy the freedom this country offers.

As we stood for the Pledge of Allegiance I saw the reaction on their faces, it was a thoughtful, respectful look, a look of such sadness. I thought about what my dad's submarine veterans group was really all about "To perpetuate the memory of our shipmates who gave their lives while serving in the United State Naval Submarines" I then started to cry myself with the realization of what that really meant . All those old sailors, my dad included, standing on the deck of an old submarine holding the flag with such pride and sadness.

Then it was time for the speakers to give their speeches about their experiences and the meaning of Memorial Day. A WWII veteran talked about the hardships and struggles and the fact that he was lucky to be alive when so many of his brothers had fallen victim to the war. One talked about how it was up to the veterans to teach "our children about the sacrifices made by so many". Another said, "that America will only be the land of the free so long as it is the home of the Brave". So many of the speakers spoke with so much pride about America that it was hard not to think about all the people who have no idea what this holiday is really about. While they go to their Bar B Q's and beaches there are some who keep up a tradition of pride in service to the United States of America and remember all those who had fallen, and rejoice in the ones who still live and remember. Let none of us ever forget what Memorial Day really is.

The essay was punishment for missing a band function on Memorial Day to witness a Memorial Day presentation by her father's submariner veterans group aboard the USS Pampanito [US Sub Vets, Inc. My take on things + random facts..

*I got my first job when I was 15 & I had to earn whatever "spending money" I had the old fashion way-by WORKING! I bought the clothes that were on my back! These days that is literally unheard of,  and that is one of my biggest pet peeves when it comes to parenting.  I think it's very sad that we are raising an army of spoiled brat, self-entitlement loving, lazy, good-for-nothing, whiners who have no work ethic whatsoever!

*I went to college for one whole year. I lived in the dorms, LOVED every minute of it & worked at the campus health clinic. I would have loved to stay in college, but it was simply too expensive for me & I knew it was time to get married (to my boyfriend of 4 years!).  

*I also worked as a CNA at a hospital. Hospitals are GREAT places to work if you want good stories to tell. 

*At 19, I was offered a job as a full-time nanny to a wealthy stay-at-home mother. I could say a lot about that job...but I won't! It was however, a "rich" (pun intended) learning experience.  I learned through that job that I very much wanted to be a mother (which I really already knew...but this job really made me long for my own children). 

*I also worked as an optometry technician for a few years. I really liked that job! This was when I was first married and pregnant with my first child. From this job I learned contentment. I had great co-workers, most of which were women. Almost all the women I worked with were mothers & when I heard them talk day in and day out about how much they missed their kids, I knew being a "stay-at-home-mom" was the only thing I wanted to do.  One thing that struck me about that job was that most of the women I worked with could stay at home, but they worked because they wanted a bigger house, a better car, new appliances, house remodeling, hot tubs and pools, concert tickets, and vacations. It was striking to me the sacrifices they were making for...stuff.  I knew early on that by making the choice to stay home I was going to have to give up on having all that "stuff", but that was the kind of sacrifice I could make (since I didn't even have it to begin with) It was really tough to leave that job, but after my baby was born I had no desire to go back to work full time

*I got married at 20, and I don't think that was too young to get married. I used to say I thought 20 was too young, but the older I get I don't see it that way anymore. In fact, I think the younger you are when you get married, the better off you may be. We live in such a "me" centered society that we are teaching our young people to value their independence to the point of self-destruction. When everything is all about YOU it's kinda hard to be part of a loving, giving, sacrificial covenant bond with someone.  It just doesn't work!  I now believe the older you are when you get married the harder it is for you to adjust & walk away from that kind of selfish thinking &  lifestyle.

Now...some other random facts about me:

-My children probably watch too much TV & I'm making it my summer goal to turn off the TV during the day & only watch it for our "Movie Night" on Friday nights.

-Contrary to my "good girl" status I  swear sometimes  & I do in fact like beer. Sorry if that tarnishes my halo for those of you that thought more of me. I have to keep real, ya know? :-)

-Oh, and If I'm being totally honest, I might as well admit to enjoying "less than wholesome" music at times. In fact, without a little Marvelous 3 cranked at the highest volume possible in the car while I'm running errands alone, I might not keep my sanity. There is only so much Veggie Tales "Jonah" lyrics one mom can handle.

-I use sarcasm with my children way too often.

-I have a horrible, un-controllable weakness for sweets! It's the main reason I  WILL NOT do any sort of diet. 

-I really hate the word "diet" too! Life is short, people! Why waste it counting grapes, weighing turkey breasts, eating rice cakes, and chugging soy protein isolate shakes? Put down your supplement bottles and disgusting cellulite burning shakes & learn to enjoy a real meal why don't you. Eat your fruits and veggies, lean meats & whole grains...and your CHOCOLATE for craps sake! Adkins Smadkins...don't torture yourself like that.

-I've tried giving up diet soda at least 4 times in my life & it just never "sticks".  I believe I know how it feels to be addicted to smoking...or crack! Seriously, this is my Achilles heel (even more so than the sweets!). 

-I detest "know it alls".  You can't be my friend if your a smarty pants like that! ;-)

-I really, really want to go to New York some day...just for hoots!

-I have no desire to be a vegan, but I have cut red meat out of my families diet, and I'm trying to eat a lot more fish.

-I think squirrels are the cutest.

-I will most likely have plastic surgery some day & I don't really care what other people think about that.

-I've always wanted to get a tattoo. Unfortunately, I married a husband that HATES tattoos on women. Once, I told Jonathan that if he died I would get his name tattooed on my butt...he didn't think that was funny!

-I don't believe in global warming.

-I hope my kids don't want to play soccer. Baseball, football,  and basketball are way, WAY more interesting to me. 

-I know I have no fashion sense, but I try really, really hard!

-I just ate 1 lb of baby carrots & homemade hummus!

What's for dinner, Wednesday????

I had one last day of my never-ending garage sale today, so we had Papa John's for dinner tonight. Not a very exciting "What's for dinner, Wednesday" post, huh? Well, I thought I could at least make it up to you by posting my guacamole recipe since we are now in prime "guacamole season" aka "BBQ/picnic season". So...here we go!






GUACAMOLE

-4-5 ripe avocados
-Sweet yellow onion minced (about 1/2 cup)
-Lime juice - 3-4 Tablespoons
-Cilantro -about 1/2 a bunch
-2 small serrano peppers (green ones!)
-Cumin - 2 1/2 teaspoons
-Sea salt - about 2 teaspoons (taste as you go!)
-Fresh ground pepper (to taste....um, about 1/2 teaspoon if I had to guess)
-1-2 small tomatoes seeded and diced small.
-Cayenne pepper (about 1/4 teaspoon)
-Tabasco (dash, dash, dash, dash, dash...haha!)

*I'm not sure you can call this a "recipe" but it's the best I could do! I LOVE guacamole, but it's one of those things I just "make as I go". The last time I made it I tried to take note of what I was putting in it so I would be able to have a "recipe" of sorts to share. Hope you try it...it's well worth the energy to make it fresh because it's SO much more yummy that way!

I love these kids!

Every night we have a little game called "say goodnight to baby Judah" where each of the older kids gives Judah a hug and kiss before bed (mainly this little game just prolongs their bedtime for another minute or two...which is probably why it's so popular-hehe!) & it's about the cutest thing you've ever seen. Over the weekend I tried to take a few pictures of this little routine & these are a few of the pictures I got. I couldn't seem to get a good picture of Chandler and Judah, but that was because it was "movie night" & Chandler had brought out his beloved Spiderman blanket & he was very concerned Judah was going to chew on it. He really does love his little brother...I promise :-).

After I took these pictures & looked at them I just kept thinking ...I LOVE these kids! Nothing has brought me more joy in this life than my four little bundles of energy! Each of my kids is so completely different and unique, and I feel so proud to be their mom. Nothing in this life has been more rewarding to me than being a mom & I feel SO blessed to spend each and every day with my kids. At the end of the day (even a loooooooooong day) it's the little things like the "goodnight baby Judah" game that make me sit back and say "I wouldn't have it any other way"! This right here is why I know I am blessed beyond measure :-).

Not Me! Monday!

Last week I had a garage sale, so I thought it fitting to do a "Things I Did Not Do While Having My Garage Sale" post. Enjoy!

-I did not spend the entire week getting ready for/having a garage sale & abandon any and ALL house work, thus leaving the entire inside of my home looking just as disheveled as the tables full of junk on my driveway...

-Eat donuts & coffee for breakfast three mornings in a row...

-Eat Papa John's pizza, Wendy's, El Maguey, Chinese, and Papa Keno's pizza for lunch...

-Eat Whoppers & Twizzlers at 2:00 am while tagging 2,000 baby onsies with .25 price stickers.

-Wear the same dirty pair of pants two days in a row because I didn't want to add any more dirty laundry to my mountain of laundry stacking up inside...

-Shop vac the garage floor until every last leaf was gone & buy a air wick plug in air freshener in the "Island Hibiscus" scent to make my garage seem more "inviting".

-Make fun of odd-ball people that came to my sale (behind their backs of course!)...

-Send my 5 year old to school in dirty socks because I did not do laundry all week...

-Make almost $500 on junk I was otherwise going to throw out!

Mother's Day!

I had a wonderful Mother's Day this year! My sweet, sweet hubby even got up early to do dishes, make coffee, and buy donuts! Then, he treated all the Mom's in our family (Me, my mom, and his mom) to a nice lunch at none other than Mr Sushi (one of my favorite places to go!).  The grandma's were not too impressed with the sushi, but everyone LOVED the steakhouse! I am so blessed to have such a beautiful family :-).



Not Me! Monday!

Here we go...it's time to be honest, folks! You will feel SO MUCH better if you just let it all out....so here is my story for everyone to read.  You can always play along at MckMama's blog.

This week I assure you I did not fix a great meal (Mahi Mahi Taco's) on Wednesday just so I could do a blog post about it.  Just in case you are wondering, this absolutely does not make me a huge, giant nerd at all! I also did not feed those fish taco leftovers to my family the very next night...and make my husband take leftovers again the next day...nope, not me!

When faced with the choice of going to the gym, or doing laundry...I certainly did not choose the laundry because I was so far behind on laundry that everyone in the family was wearing their undies for the second day in a row. No! I would never, ever be that far behind on laundry! Because of this laundry predicament, I also did not wear my dirty sports bra...twice!

Even though I am growing weary of trying to keep appropriate clothing (or any clothes at all!) on my child, I assure you... I did not give up and let my 3 year old wear her ratty, torn up, see though slip outdoors to play in.  I also did not let her then go over to the neighbors back yard to play dressed like that either.  No, that would have looked a little odd & gotten lots of strange looks from the neighbors who were probably wondering why my child was not wearing "normal" clothing.

Because I am still so far behind on sleep that I may never ever get caught up at this point, I certainly did not get up & feed and clothe my oldest two, drive them to school, come home, turn on the TV for my 3 year old (with a bowl of cereal and sippy cup), and crawl back into bed with my 7 month old. I did not then stay in bed until 10:30 & then shuffle around the house all day in my PJ's until it was time to go pick the kids up from school again at 3:30. THEN...because I was still in my PJ's I did not call my neighbor and beg her to pick up my kids for me because I was to embarrassed to leave the house still looking like a zombie!

Last, but certainly not least...I DID NOT actually utter the words "awww, I want another little baby girl" when I saw a teeny, tiny little baby girl in the nursery at the gym.  Ummmm....I think I would need to be committed if I actually had another baby, so let's just all be glad that I didn't actually say that. Whew!!! All I'm saying is...  if I really did do or say any of the above things then I must be a little crazy!

"What's For Dinner, Wednesday?" - a bit late...

Sorry I didn't get this up last night....better late than never, eh?   Jonathan was working on the computer last night & we only have ONE computer in the White house.  Even us adults have to learn to share sometimes :-).

Mahi Mahi Soft Taco's with Ginger-Lime Dressing.















-Olive oil
-Salt and pepper
-4-6 Mahi Mahi fillets.

*Heat olive oil in skillet , season fish fillets with salt and pepper, and cook fillets until golden brown on both sides (about 3 minutes per side)

Salsa
-1 cup diced (small) fresh pineapple
-1 large Mango (also diced small)
-1 avocado (diced)
-1 jalapeno pepper, minced
-about 1/4 cup red onion, minced
-1 cup fresh cilantro, chopped
-juice from 1/2 a lime

Ginger-Lime Dressing
-about 1/3 (rounded) cup of sour cream.
-juice from 1/2 a lime (about a tablespoon)
-1 teaspoon fresh grated ginger root.
-1/2 teaspoon cumin
--big dash (1/8 tsp?) cayenne pepper
-salt
-pepper
 
-Warmed flour tortilla shells.


*Assemble warm flour tortillas with cooked fish &  salsa. Drizzle with sour cream dressing. Enjoy!


*This is what the Fish Taco Assembly line looks like. :-) That is fresh guacamole on the far left, and cut up pineapple next to it. I'll share my guac recipe another time. It's one of those recipes that I just make up as I go, and I don't really know how to estimate measurements for it.

Not Me! Monday!

Welcome to Not Me! Monday! This blog carnival was created by MckMama. You can head over to her blog to read what she and everyone else have not been doing this week.

So, here it is...my first "Not Me Monday" post. Hope you enjoy!

This past week I certainly did not neglect to bathe my "Fab 4 Whites" for 3 consecutive days. Choosing instead to only wash their hands, feet and face before bed & dust them with a little extra baby powder & apple scented hair detangler before school! Speaking of showers, I assure you I did not go without a shower for those three days either! Nor did I use a baby wipe to remove spit-up from my one and only clean pair of jeans, followed by a little shot of febreze and a spin in the dryer to freshen them up so I could continue to wear them all day. I also did not put my 7 month old in a 3T/4T Disney princess pull-up when I ran out of diapers and didn't want to go to the store with all four kids to buy more.

Oh, and because I'm such a perfect mother with the patience of a saint, I certainly did not jump off the treadmill at the gym and storm into the child-watch room to yell at my misbehaving 5 year old! This loud, and very sudden outburst on my part certainly did not alarm the nursery workers, or make my own 7 month old cry either. Nope, not me! Last, but not least...I DID NOT eat 3 pieces of cherry chocolate cake & 2 pieces of pizza for lunch and then wash them down with a diet Pepsi to ease some of the guilt (I still have no idea why I can't lose this baby weight???). I promise you...I did not do those things, because if I did that would make me kinda crazy!

Sometimes I don't get dressed for the day until 5:00...pm, and on the weekend I let my kids eat cookies for breakfast. I drank coffee (and sometimes diet coke) when I was pregnant. I use under eye concealer to cover up my zits & I bake when I'm stressed. If you can deal with all that....then welcome to our family blog!
